Ingredients:
Main Ingredients
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 can diced tomatoes (14 oz)
- 1 can coconut milk (14 oz)
- 2 cups vegetable broth
- 2 cups mixed vegetables (carrots, potatoes, peas) chopped
- to taste salt and pepper
Instructions:

Heat the oil in a large pot over medium heat. Add the chopped onion and cook until translucent.

Add the garlic and ginger, and cook for another minute.

Stir in the curry powder, cumin, and coriander, and cook for another minute until fragrant.

Add the diced tomatoes, coconut milk, and vegetable broth. Bring to a simmer.

Add the mixed vegetables and simmer for about 30 minutes, or until the vegetables are tender.

Season with salt and pepper to taste. Serve hot.
